Simple way of preparing the potatoes, very good side dish for sambhar rice, my favourite dish..learned this from my mom..this roast will be always in our friday menu when i was kid..we r great fan of this roast n am still..
3nos Potatoes(medium size)
1no onion(big)
1tsp fennel seed
5nos garlic pods
1tsp red chilli powder
5nos curry leaves
salt
Oil
Pressure cook the potatoes upto 3hiss...peel the skin n cut them small pieces..add the redchilly powder n salt to the potatoes pieces, mix well with ur finger n keep aside for half an hour..cut the onions into small pieces, grind together the fennel seed n garlic pods in a mixie bit coarsely..
Heat 4tsp of oil, add the finely chopped onion pieces with a pinch of salt n cook them well until they turns transculent, add the grounded paste,curry leaves n cook again for a while..add the spiced potato pieces n cook in simmer with lid closed..dont add water at alln, if u add water they will turn mushy,cooking in simmer with lid closed will helps the potatoes to get well roasted..cook until the oil get separated..
