Zucchini is a low caloric vegetable, its a real versatile vegetable..can prepare them as any sort of dishes, they will get well cooked very easily, i often do them as scrambled eggs..one of the excellent n easiest way of preparing this vegetables..for a change i prepared as omelette..these vegetables have sufficient vitamins n minerals, easy to cook with eggs, also with meat n shrimps..actually french peoples prepare these sort of omelettes with ham, i have changed them as our style of cooking..
2nos Eggs
1/4cup Zucchini grated
5nos Shallots
1no Green chilly
5nos Curry leaves
1/4tsp Turmeric powder
Salt
Oil
Beat in a large bowl eggs, 2tsp of zucchini, turmeric powder n enough salt...chop finely the shallots n green chilly too..
Add a tsp of oil in pan, fry onions n green chilly pieces until onion turns transculent..add the fried onions n green chillies as well as curry leaves to the egg mixture..add the rest of the grated zucchini..mix everything well..
Heat oil n pour a ladle of egg n zucchini mixture, cook them well for a while until they get well cooked...
Yummy Zucchini Omelette is ready to serve..
Can insert these sort of vegetables to kids by making them as omelettes...
