Drumstick leaves contains four times as much Vitamin A as carrots...the drumstick trea names for its long bean like fruit produces fruit n leave for than nine months of the year, its grows rapidly even in poor soils who doesnt need artifical fertilizes r pestidcies n requires very little space to thrive...fortunately we get fresh drumstick leaves here in Indian stores, i used freeze them when ever i get them after using them the day itself..they r really handy n healthy..here comes my simple stirfry..quite healthy for kids n adults..
2cups Drumstick leaves
1/4cup Moongdal (soaked)
1/2tsp Mustard seeds n urad dal
2nos Dry red chillies
5nos Garlic pods (minced)
2tbsp Grated coconut
Salt
1tbsp Oil
Heat the oil in a pan, once the oil is hot add the mustard seeds n urad dal n let them splutters...add the dry red chillies n also minced garlic pods..fry them for a while...add the soaked moongdal, drumstick leaves with enough salt n stir them for a while, just put the flame in simmer n cook them with lid closed for few minutes, add the grated coconut n put off the stove...
Serve them hot as sides r else can have them with hot rice topped with ghee...
