Dunno wat about ur place, but its getting cool, cool nowadays here, yesterday the mercury went down upto -5°c and feel like sleepy for the whole day..Needless to say how it would be lazy to cook and i felt like having something as soup for dinner, this easy veggie soup goes for variety of veggies, i found in my fridge that i have chopped finely and cooked everything together in vegetable broth in which i have finally added few left over pasta, i prepared for our sterday's lunch..This soup was really filling, comforting and hearty with plenty of veggies and its quite an easy soup can be prepared within few minutes with simple ingredients that we have anytime at home..Watelse we need for to overcome this cold weather, am trying to send this easy veggie pasta soup to

4cups Mixed veggies (i used finely chopped carrots,potatoes, french beans,cauliflower florets, cabbage,broccoli florets,zucchinis,lotus roots,turnips,parsnips,leeks )
1no Onion(chopped)
2nos Tomatoes
6cups Vegetable broth
1/2cup Cooked pastas
1/4cup Parsley leaves (chopped)
Salt
Pepper powder
Olive oil
Grind the tomatoes as puree and keep aside..heat enough olive oil in a large sauce pan, saute the chopped onions and chopped parsley leaves until the onions turns transparent, add the chopped veggies one by one and saute everything until the veggies shrinks a bit...add the pureed tomatoes,salt,pepper powder and vegetable broth,brings everything to boil..now put the flame to simmer and cook until the veggies get well cooked, smash slightly the veggies with a ladle, finally add the cooked pasta, cook for few minutes and put off the stove..
Serve hot topped with pepper powder or any other dry herbs..
