Few days back for making out creamy beets soup, i have bought few beets from my farmer market...I want to make out some salad with those leftover beets which pressure cooked and prepared as salad along with few corn kernels and crunchy celery stem, tossed everything with a simple dressing made with vinegar, pepper powder, salt and olive oil...Easy salad suits incredible for summer day when served cold, also prefect for a simple evening dinner with some toasted bread...We just love it, this beautiful and colourful salad goes directly to Usha's

2nos Beetroots (pressure cooked and chopped)
1cup Corn kernels
3nos Celery stem (chopped)
1tbsp Apple Cider vinegar
Salt
Pepper powder
2tbsp Olive oil
Take the chopped beetroots, corn kernels and celery steam in a bowl...meanwhile mix the vinegar,salt, pepper powder and olive oil in a small bowl, while serving the salad pour this dressing over the veggies,toss gently and serve immediately..
Enjoy with bread toasts...
