This is HoHo Cake. No, not Santa Claus "HoHo Merry Christmas" cake... It is a copycat of the Hostess snack cake HoHo's! And it is Ha Ha HEAVEN : ) This is a simple chocolate cake box mix, with two different homemade frostings to layer on top! This is the one I was telling you would 'knock your socks off'.. and it did mine.. and my Moms... and my sisters. We LOVED it !

HOHO CAKE
1 box (18 oz) Chocolate cake mix
(eggs, oil and water the cake mix calls for)
MIDDLE LAYER:
1 cup Butter, softened
1/2 cup Milk
1 tablespoon Vanilla extract
3 cups Powdered Sugar
1/4 teaspoon Salt
TOP LAYER:
1/2 cup Butter, softened
1 teaspoon Vanilla extract
3/4 cup Cocoa
3 cups Powdered Sugar
8 tablespoons Water, Adding one at a time
Preheat oven to 350 degrees. Grease and flour a jelly roll pan. Prepare cake mix according to its package directions. Pour into the greased jelly roll pan and spread around until its even. Bake for 15-20 minutes. Start checking for doneness after 15 minutes.
Let cool 30 minutes and then start mixing middle layer.
Middle Layer: With a hand mixer, mix the butter and milk together until combined. Add in the vanilla and salt. Mix again. Slowly add in the powdered sugar one cup at a time. Beat on medium speed for 5-10 minutes or until creamy. ( I beat mine for 10 minutes)
Spread evenly over the cake. Then place in freezer while you mix top layer.
Top Layer: Beat the butter and vanilla together until creamy. Slowly beat in the cocoa on low speed. Once cocoa is thoroughly mixed in, start slowly adding in the water 1 tablespoon at a time and the powdered sugar, one cup a time. Mix together until you get a creamy frosting. (You may not need to use all of the water)
Spread the Top Layer evenly over the middle layer. Place cake in fridge and let chill before eating! Slice and serve : )
