Its a real pleasure to celebrate third birthday of my blog baby today..Three years in this blogsphere, never thought of this fabulous milestone, am soo excited..I have to say big thanks to each and every reader of this blog,nothing is possible without you all..Thanks for all ur continous encouraging supports which gives more enthu to continue this wonderful journey...Am very much thankful to this blogworld coz i have met so many wonderful friends through this virtual world and learned many healthy stuffs and still learning more and more..Am celebrating this third blog anniversary with this rich looking delectable lychee badam kheer,needless to say this kheer turned out super delicious with a delicate lychee flavour and nutty texture, i didnt blanched the almonds and chironji seeds in this kheer and used them directly by soaking in hot milk, this delightful drink tastes simply awesome when they are served chilled...With a generous pinch of saffron strands and plenty of nuts, this kheer goes for a quick preparation and we couldnt stop enjoying this incredible kheer...
20nos Almonds
1/2cup Lychee (chopped)
1tsp Chironji seeds/charoli seeds
4cups Milk
1/2cup Sugar
1tbsp Saffron strands
1/2tsp Cardamom powder
Pistachios (for garnishing)
Take the almonds,chironji seeds with enough water in a microwave safe bowl,cook for a minute in high power and keep aside..Grind the almonds,chironji seeds and chopped lychee with enough milk as a smooth paste..Meanwhile heat the milk with saffrons in a vessel and bring to boil,add the sugar,almond-chironji paste,cardamom powder and cook for few minutes..Allow it to cool,arrange in fridge atleast for 2 hours and serve it chilled ..
Garnish with pistachios...
