Sweet Corn soup is a the simplest recipe I have come across. Also it takes very less time to make if vegetable stock is ready.
Ingredients :To make vegetable stock :1 large onion
1 large tomato
1/2 tspn black pepper cons
1/2 capsicum
2 green chillies
2 tbspns chopped corriander
1 & 1/2 litre water
To make soup :1 cup steam cooked sweet corn kernels
3 tbspns cornflour dissolved in 1 cup water
3 tspns sugar
salt to taste
To serve with :Vinegar
Red chilly sauce
Soy Sauce
Preparation :
To make vegetable stock :Take water in a deep pan
Add all the vegetables into the water
Boil it for atleast 30-45 minutes
Pass it through a strainer
Keep aside for making soup
To make soup :Take vegetable stock in a deep pan
Coarsely crush half of the steam cooked sweet corn kernels
Add crushed sweet corn and sweet corn kernels into the boiling stock
Cook it for 10-15 minutes
Add salt and sugar to the soup
Thereafter, slowly dissolve the cornflour mixture in it
Stir continuously on high flame
Once the soup is thick lower the flame and cook it for 2-3 minutes
Pour it into individual soup bowls
Spread vinegar, chilly sauce and dark soy sauce over it
Serve hot
Notes :
1. You may use uncooked sweet corns, but in that case it has to be cooked in vegetable stock for few minutes
2. Serve it hot because the soup loses its thickness when it is cool
