Thai green curry paste can be stored for almost 15 days. So before making main course, this paste can be made well in advance to save time.
Ingredients :2 -3 small sized chopped onion ( or shallots if available)
1 cup finely chopped corriander (with stems)
5 finely chopped green chillies
3-4 stalks finely chopped tender lemon grass (with stems)
1/2 tspn corriander seeds
1/2 tspn cumin seeds
1/2 tspn lemon zest
4-5 chopped garlic cloves
1/2 inch ginger piece cut into small pieces
1/4 tspn black pepper powder
Salt to taste
Water as required
Preparation :Take all ingredients in a blender
Blend it into smooth paste
Transfer it into an air-tight container
Store it in refrigerator for almost 15 days
Notes :1. Few other ingredients like Soy sauce, brown sugar etc. may be added to the thai green curry paste. But it dilutes it colour, so I have not used it.
2. You may blend it with vegetable oil or coconut milk instead of water.
