Cranberry Orange MuffinsPanera Bread Copycat Recipe
Serves 10-12
1 cup fresh cranberries, chopped
3/4 cup sugar divided
2 teaspoons orange zest
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup orange juice
2 large eggs
1/2 cup chopped nuts
Preheat the oven to 400 degrees.
Grease a 12 cup muffin pan. In a bowl, stir together cranberries, 1/4 cup sugar and orange zest. On a larger bowl, sift together the flour, baking powder, salt and the rest of the sugar. Add oil, orange juice and eggs all at once to the flour mixture and stir until moistened.
Fold in the sugared cranberries and nuts. Pour the batter into muffin pan, evenly dividing the batter between cups. Sprinkle tops with coarse sugar. Bake at 400 degrees for 20-25 minutes or until golden brown.
