Gudanna - Jaggery Rice Recipe
Navaratri is a festival of Shakti and nine form of Shakti are worshiped during these days. Literally "nava" means nine. Durga pooja and durga namaskara is popular in Udupi region which is a prayer to Goddess Shakti to lift us from the shackles that limit us on our path of progress- spiritual and material. The Goddess is invoked in the lamp and worshiped. Gudanna/jaggery rice is a special naivedyam offered to Goddess. Today let us learn gudanna/jaggery rice recipe.
Gudanna/jaggery rice Ingredients
- Rice- 1 bowl
- Milk- 1 and 1/2 bowl
- Powdered jaggery- 1 bowl
- Ghee- 1/2 bowl
- Cardamom- 3 nos
- Cashew nut - handful
- Raisins- handful
Serves
3 to 4 adults
Preparation
Powder the cardamoms and keep aside.
Method
- Clean and wash rice and pressure cook it adding 1.5 bowl of water and 1.5 bowl of milk. The rice should not be neither mushy nor too separate.
- In a tampering pan add a tea spoon of ghee and fry cashews till they change in color. Fry raisins as well in the same pan till they fluff up. Keep it aside.
- Heat a heavy bottomed vessel/Kadai, add jaggery and little water. When jaggery gets dissolved and plain jaggery syrup is ready, add cooked rice to it.
- Keep on stirring in low flame, so that the rice absorbs the jaggery. While continuing to stir, add ghee in intervals. Each time you can add 4 tea spoon of ghee. This process may take around 10 to 15 minutes.
- When the mixture forms a lump and leaves ghee then it is done. Now add fried cashew nuts, raisins and cardamom powder. Mix it well.
- Now gudanna/jaggery rice is ready to offer to Goddess Durga.
