Bulgur has the highest protein value of any of the cereals, however, it is not a complete protein. Wheat makes a good contribution of some of the B vitamins and trace minerals (iron and zinc) as well. If you have never used bulgur before, you are missing a treat. It is a delicious form of whole wheat that has been ground and pre-cooked, which makes it a snap to prepare. Being a rich source of folic acid and fiber, bulgur is a favorite grain that aids in the prevention of heart disease. It is pre-cooked and in some recipes requires only hot water or broth for preparation. I prepared this khichidi for sterday's dinner, they were simply easy n delicious to prepare, coconut chutney goes awesome as side for this healthy n colourful bulgur khichidi...
1cup Bulgur
1/4cup Carrot chopped
1/4cup Moongdal
1no Onion chopped
1no Tomato chopped
2nos Green chillies slit opened
1tbsp Ginger crushed
5nos Garlic sliced
2nos Bay leaves, cinnamon sticks, cloves,star anise
1/2tsp Turmeric powder
5nos Curry leaves
Salt
Oil
Soak the moongdal in hot water for 15 minutes...Heat enough oil in a kadai...add the whole spices n fry them...now add the chopped onions, chopped tomatoes n slit opened green chillies, also add crushed ginger pices, garlic slices...stir everything well until they get cooked a bit...add the chopped carrots n cook them for a while too..
Add the soaked moongdal ,turmeric powder n curry leaves to the kadai..stir them for few minutes..add 2cups of water with enough salt..bring them to boil...add the bulgur to the boiling spiced water n cook until they get well cooked also the water get evaporates...
Serve them hot with coconut chutney r else any spicy gravy...Healthy dish for everyone!!
