Today i prepared this semolina pancake with pineapple chunks and kesar mango pulp for our breakfast..Last weekend, we went for Indian grocery and i picked a can of kesar mango pulp..I want to make out something with that kesar mango pulp and my mind went for making out pancakes with those kesar mango pulp and finally i ended with fruit pancakes by adding some leftover pineapple chunks along with mango pulp to make pancakes with semolina and all purpose flour as eggless version...We enjoyed having this fantastic and beautiful orange coloured pancakes with honey and maple syrup and everyone at home loved it..Even i got hooked with this fantastic combination and am gonna to try with various versions of pancakes or baked goodies with this combination...Needless to say that this pancake goes to my
Pancakes Event..
1cup Semolina (fine grind)
1cup All purpose flour
1/2tsp Baking soda
1/2tsp Baking powder
1/2cup Kesar mango pulp
1/2cup Pineapple chunks (finely chopped)
2tbsp Packed brown sugar
1/2cup Yogurt
Butter
Mix all ingredients in a large bowl, make a thick batter and keep aside for 15minutes...heat a griddle or tawa, generously grease with butter or oil.... Pour a ladle of batter for pancakes..Cook until the batter looks bubbly on top, flip over and cook the underside. Repeat with remaining batter...
Serve warm with honey or maple syrup!!!
