This chicken is SO good. I just tried this recipe out tonight, and felt like I had just been out to a restaurant. This chicken is lightly breaded, and teamed up with the perfect sweet, sour, and tangy-goodness sauce! Folks, this one is a keeper.

3-4 boneless, skinless chicken breasts
Salt and Pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil
Sauce (double if you like extra sauce for rice):
3/4 cup sugar
1/4 cup ketchup
1/2 cup vinegar
1 tbsp soy sauce
1 tsp garlic salt
Directions:
1. Cut chicken into chunks and season with salt and pepper. Dip chicken in cornstarch and then egg.
2. Fry chicken in oil until brown, but not cooked through.
3. Place in a single layer in a baking dish.
4. Mix sauce ingredients and pour over chicken.
5. Bake for one hour at 325 F, turning chicken every 15 minutes so it is evenly coated. Serve over rice.
