Pulao with pearl onions tastes truly marvellous and its one among the quick rice dish i do quite often at home,coz they need very few ingredients..This pulao goes for a simple spice powder with some scrambled paneer and shallots cooked along with rice,they doesnt need any paste or either coconut milk..Quite a quick pulao gets ready in less time also gets finished in less time,if u r bored of ur usual vegetable pulao or ghee rice,u have to give a try to this wonderful looking pulao..Its our favourite pulao which i never failed to make whenever i get pearl onions from the Indian grocery..
2cups Basmati rice
15-20nos Shallots/small onions
10nos Garlic cloves (chopped)
2nos Whole spices (bay leaves, cloves, cinnamon stick & cardamom)
1/2cup Scrambled paneer
1cup Fresh cream or Yogurt
Oil
Salt
To grind:1tbsp Coriander seeds
1no Cardamom
1no Cinnamon sticks
2nos Cloves
1tsp Peppercorns
1/2tsp Fennel seeds
Dry roast the coriander seeds,peppercorns and fennel seeds and grind along with cardamom,cinnamon stick and cloves as fine powder,keep aside..Heat enough oil in a pressure cooker,fry the whole spices until they turns brown..wash and soak the rice with 2cups of water for 5 minutes..Once the whole spices turns brown,add the garlic cloves and shallots, saute everything well until the onions turns transculent... Add the spice powder as per need,saute again for few seconds..
Add the rice,scrambled paneer and salt,saute for few minutes, now add the soaked water,yogurt or cream and close the pressure cooker with a lid..cook upto to three whistles and put off the stove..
