Here are a few more soups I've tried in the past 4 years from various cooking websites! These are the ones that I've made many times since finding them!

Chicken Tortilla Soup |
This is a delicious and easy soup! What is so great about this soup is not only the authentic Mexican flavors but that it can be made and ready to serve in less than an hour! Here is the link to the recipe **click here** The only thing I did differently with this recipe was to cut the chicken cutlets into bite sized pieces and saute them in the spices before adding them into the soup!

GroupRecipes.com. It's an all time favorite of mine because of the smokey creamy flavors and textures! And it's low fat too! This is another soup that can be made in less than an hour! I'm posting the this recipe the way I made it and using my own photo, as always!

Creamy Kielbasa Soup
INGREDIENTS; 1 large carrot, peeled and diced
2 medium-sized potatoes, peeled and cubed 8 oz. low fat smoked kielbasa - chopped 1/2 pkg. refrigerated sauerkraut, drained and rinced 1 1/2 cups fat free sour cream
DIRECTIONS; In a small amount of butter, saute carrot, celery, onion, and a dash of salt until vegetables are softened. Add water, potatoes and chicken bouillon. Boil until potatoes are just about tender; 5 - 7 min. Add smoked kielbasa and sauerkraut. Bring to a boil; reduce heat to medium low, and simmer about 5 min. or until potatoes are tender. Remove about 1 c. of cooking liquid from soup along with about 1/2 cup of the potato chunks. Mash the potato chunks and stir together with sour cream in a small bowl; add back the liquid with the potato mash to the soup, along with the sour cream. Heat through. Taste for seasoning. Add salt and pepper if needed. Serve warm! Serves 4 |
