Calamata Couscous
INGREDIENTS;
1 (14-ounce) can of low sodium chicken broth 1 cup couscous 1 large clove of garlic, crushed 1/4 cup onion, minced 2 tablsepoons olive oil, extra virgin salt and pepper, to taste 1/2 cup kalamata olives, pitted and chopped 1/2 cup provolone cheese, shredded 2 tablespoons fresh parsley, chopped
DIRECTIONS;
Heat chicken broth in a microwave safe dish on high for about 2 minutes or until boiling.
Remove from microwave and add couscous. Cover with plastic wrap and let sit for 5 minutes. In the mean time, saute garlic and onion in a small skillet with the olive oil. Saute for a few minutes until softened. Add salt and pepper to taste. Combine the sauteed onions and garlic, the remaining ingredients, and the couscous. Stir together and serve warm. |
