Arby's Jalapeno BitesCopycat Recipe
Makes 24
24 jalapeno peppers, sliced in half lengthwise, seeds removed
16 ounces cream cheese, room temperature
4eggs, beaten
4 tablespoons water
1 teaspoon salt
2 cups plain dry breadcrumbs
oil for deep frying
Fill jalapeno pepper halves with cream cheese and press halves back together. Combine eggs, water and salt. Dip jalapeno peppers into egg mixture and into breadcrumbs. Place on a cookie sheet and freeze for 2 hours. Heat oil in deep fryer to 370 degrees. Deep fry peppers in batches for about 3 minutes, or until golden brown. Transfer jalapeno poppers to paper towels to drain.
Arby's Bronco Berry Dipping SauceCopycat Recipe
Makes 1 Cup
3/4 cup water
1/3 cup sugar
1/4 cup corn syrup
3 tablespoons pectin
2 teaspoons cornstarch
1 teaspoon vinegar
1/4 teaspoon red food coloring
1/8 teaspoon onion powder
dash cayenne pepper
dash garlic powder
dash paprika
1/4 cup minced red bell pepper
1/2 teaspoon minced canned jalapeno peppers
Combine all the ingredients except the bell and minced jalapeno peppers in a small saucepan. Whisk well.Set saucepan over medium/high heat, uncovered. Add peppers and bring mixture to a full boil, stirring often. Reduce heat and simmer sauce for 5 to 7 minutes, or until thick. Remove from heat and let sauce sit for about 10 minutes. Stir and cover. Use sauce when it reaches room temperature or cover and chill until needed.
Southwest Dipping SauceArby's Copycat Recipe
Makes 1/2 cup
1/4 cup buttermilk or 1/4 cup Mexican Crema
1/4 cup mayonnaise
2 whole chipotle chiles in adobo
1 tablespoon adobo seasoning, from can
2 large garlic cloves, roasted
2 teaspoons Dijon mustard
1 teaspoon lime juice
Place peppers, adobo and buttermilk/crema in container for blender. Blend until peppers are chopped up and everything is mixed well. Add mustard, garlic and juice.
Blend for around 30 seconds, or until mixture is smooth. There will be some small chunks of pepper and garlic, that's ok, it gives texture. Add mayo, blend briefly, about 20 seconds so mayo doesn't break. Refrigerate overnight, covered. Use for dips, sandwiches, whatever.
