Zucchini is one of the versatile vegetable..we can cook its as kootu, stir fry or another dishes..i want to try it as soup..as am a soup lover, tried with zucchini n was really surprised to get a superb clear soup..Worth to try..its a negative calorie vegetable n while dieting can take them without any limits..they r very good source of vitamin C..
2nos Zucchini
1no Onion
1no Tomato
1/2tsp Cumin seed powder
1/2tsp Pepper powder
1/2tsp Ginger (chopped)
1tsp Cornflour
2cup water
Salt
1tsp Coriandre leaves
Roughly chop the zucchini into pieces, cut the onions n tomatoes too..pressure cook zucchini pieces, onion n tomatoes pieces with cumin seed powder, pepper powder, chopped ginger , salt as per taste n water n let them cook until 3 whistles...
Once they cooked..pour them in a colander n smash it with ur hands or crush them to extract the soup..add water if need, adjust ur soup as ur wish..once everything is drained pour the soup in a pan, heat it for 3 minutes when they start boiling just add the cornflour batter(mix cornflour with 1tablespoon of water) to the soup n put of the stove..
Dont peel the skin of Zucchini coz its contains more vitamins..
Smashed n strained vegetables can also used in sambars r kootus..keep them on fridge, can keep them just for one day..add them while doing sambar r kootu.
Adjust pepper powder n salt as per need even while serving..
