Christmas Eve is finally here! I love this day. Maybe a little bit more than Christmas day. Today is full of excitement and anticipation for the night ahead! I am baking like crazy today. I will be posting the goodies next week for you : ) My girls are so excited they are running around my house like wild animals, and asking me every 5 minutes, "How much longer until Santa comes?" .. "How much longer until we get ready for the party?" lol I miss being a kid! I know how magical this time is for them!
I saw this Caramel Popcorn on
MandysRecipeBox and thought it looked delicious and something yummy to take to co workers and friends! It turned out just how it looks! DELISH :) Well, I better get back to baking and wrapping, and hearing the kids ask me the same questions over and over and over again... But before I go I want to wish you all a very

Caramel Popcorn
2 cups brown sugar
1 cup light corn syrup
1 teaspoon vanilla
1 stick butter (1/2 cup)
1 can sweetened condensed milk
3 bags (3 oz bags, plain microwave popcorn, popped)
Place the popped popcorn in a large bowl. Try and dig out leftover kernals at the bottom and throw them away.
Place the brown sugar, corn syrup and butter in a saucepan and cook over medium heat. Stir until the butter melts. Add vanilla and stir. Slowly add in the condensed milk and mix well together. Continue to stir and cook until it reaches the softball stage.( Test this by getting a mug and fill it with cold water. Drop some of the caramel in. If it forms a ball and doesnt turn into a soupy mess, than its ready )
Pour caramel over the popcorn. Stir gently to coat all of the popcorn. ( Be very careful because the caramel is very HOT) Leave in the bowl to eat or shape into balls! YUM
