Boiled potato chunks and crunchy bell pepper pieces makes this masala rice more tasty and delicious...This masala rice is quite a simple, easy and quick rice dish which suits definitely prefect as lunch box menu...I used to prepare this sort of masala rice often in case i have bought loads of veggies from farmer's market, this time i bought a bag of green and red bell peppers and i prepared this potato and bell pepper combination coz my familly members love anything with potatoes..This is an easiest and my usual way to insert veggies in our daily menu because i have picky eaters at home..making out simple rice dishes tossed with few spice powder with plenty of chopped veggies always makes any rice dish more tastier na!!!!This is how i feed my picky eaters at home, so that i can easily feed them with any veggies they hate to eat as stir fries or as any sort of side dishes...If u go through my blog u may see many rice dishes prepared as simple masala rice with many sort of veggies..This rice dish also needs hardly few minutes to prepare if u have already some cooked left over rice...

2cups Cooked Rice
1nos Onion (chopped)
1/2cup Boiled potato pieces
1/2cup Bell pepper pieces
1/2tsp Red chilly powder
1/2tsp Garam masala powder
1/4tsp Cumin seed powder
1/4tsp Pepper powder
1/2tsp Cumin seeds
2tbsp Green onion pieces
Salt
Oil
Heat oil in a large pan, add the cumin seeds and let them splutters..add the chopped onion and cook until they turns transculent..immediately add the cooked potato chunks, bell pepper pieces with all spice powder and salt and stir until the spice powders get well mixed with the veggies, try to keep the bell pepper pieces bit crunchy...finally add the already cooked rice to the veggies and toss gently for a while, add the chopped green onion pieces and put off the stove..
Serve Hot!
