Cucumber Soygurt Sauce is a vegan take on the Greek classic,
Tzatziki.
Ingredients:1 6 oz. carton plain unsweetened soygurt
1 medium cucumber, peeled, seeded, chopped fine or grated
1 tbsp lemon juice
2 tspn fresh mint leaves, chopped
1/2 tspn sugar
1/2 tspn salt
Preparation:- In a medium bowl, mix together soygurt, cucumber, lemon juice, mint, sugar, and salt.
- Keep refrigerated; use within 3 days.
