This next dessert was a recipe I tried a few years ago! It is perfect for Valentine's Day! It was very easy to make and decorate! And also very easy to eat! Delicious!

Matrimonial Bliss I made half the recipe and put it in 4 cupcakes cups. I made it as written except I used strawberry jam and walnuts instead of rhubarb and coconut. I highly recommend this wonderful dessert. I garnished it with melted white chocolate ganache and then carved 2 hearts out of frozen whole strawberries!
Ingredients- 5/8 cup butter
- 1 cup packed brown sugar
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 cup flaked coconut
- 1 egg
- 1 teaspoon baking soda
- 1/2 cup rhubarb jam
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Grease one 10 inch round cake pan. Place butter or margarine, brown sugar, flour, oatmeal, coconut, egg and baking soda in a bowl and mix well. Put 2/3 of the batter in the prepared pan then spread the rhubarb jam over it. Pat the remaining dough over the top. Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. This recipe is from Allrecipes.com
