I have LOTS of pork chops in my freezer, as I mentioned in this post about a recent pork chop recipe that I tried...'Cornmeal Crusted Pork Chops'. So, of course I just had to try the 'Drunken Pork Chops'!That title really says it all! This recipe was so easy and tasted so good! The sauce in this recipe had an Asian flare to it! I thought it would taste like BBQ sauce, but nooooo, it was so much better than that! It always amazes me how certain combinations of simple ingredients, can come together and make flavors that you would never expect! That's what keeps me compelled to try new recipes! It's like a delicious science experiment every time!I found this recipe on a food blog called 'Siggy Spice' . This was a VERY popular recipe on that site, with lots of great reviews and helpful comments! I read every single comment looking for suggestions on what kind of beer to use because I couldn't find the exact beer stated in the recipe! You can use any dark beer and long as it's not as bitter as a stout beer. Here is the recipe to these seriously scrumptious pork chops...
INGREDIENTS:
5-6 pork chops- bone-in or boneless, your choice
Salt and pepper to taste
1 bottle(or can) of beer - use a dark beer, but not a stout. I used Guinness Draught
1/2 cup brown sugar
1/3 cup ketchup (I know, I know....but TRUST ME!)
DIRECTIONS:
Put a little bit of extra virgin olive oil in the bottom of a skillet.
Season the chops with salt and pepper and brown both sides.
While pork chops are browning, combine beer, ketchup, and brown sugar in a bowl.
Pour sauce mixture over the pork chops, cover and simmer for 40-45 minutes.
Remove pork chops and thicken the sauce a bit.
In a small cup, combine 1 TBSP of cornstarch in 1/4 cup of water.
Stir to combine and add to boiling sauce, whisk so no lumps form.
Put pork chops back in the thickened sauce, flip to coat.
As you can see in my photo, I served these pork chops with white rice and peas. But you can serve them with mashed potatoes and any vegetable you like! That sauce from this recipe would taste great with anything!
