Can I just first start by saying how much I am loving being a foodie blogger! It really is turning into a fun hobby! I have been meeting so many new people, like myself, who love to cook and find new recipes to try out! There are so many food blogs it's unbelievable! I have a lot to learn from all these amazing bloggers out there.. I'm excited!
As for this delicious recipe, my Mom has been making this for as long as I can remember. It was one of my favorite meals she would make us growing up! She would always serve it with corn and garlic bread, and that is what I serve with it too when I make it. I am dissappointed in how my picture of it turned out though. The pics look great when I take them with my camera and after I edit them, but it seems like once I post it on blogger, they look terrible! Whats up with that? Anyone else have that problem or is it just me?
Well enough about my problems... ha Here is this scrumptious, easy recipe:
SOUTHWEST LASAGNA
1 lb Ground beef
1 small Onion, chopped
3 cans (10 oz each) Tomatoe soup
1 cup water
1 tsp Garlic salt
2 tbs Taco seasoning
3 cups shredded Colby-Monterey Jack cheese
9 Lasagna Noodles
Preheat oven to 400 degrees. Bring the lasagna noodles to a boil in a large pot and cook according to package directions.
In a large skillet, Cook the ground beef and onion together. Once cooked thoroughly, drain the grease.
In a large bowl combine the 3 soups, water, garlic salt and taco seasoning. Mix well. Once beef is cooked and drained of grease add to the bowl. Mix well.
Spray a 9x13 baking dish with cooking spray. Lay out 4 of the lasagna noodles, slightly overlapping. Pour half of the soup mixture on top, spreading evenly. Sprinkle one cup of cheese over the meat mixture.
Repeat again with 4 lasagna noodles, and then spread the last half of mixture on top. Sprinkle the last two cups of cheese on top. Bake for 45 minutes or until Hot and Bubbly! Let cool 10 minutes before cutting into. Enjoy :)
