INGREDIENTS:1/2 cup of uncooked Quinoa
3/4 cup of water
1 can of drained chick peas
1 large tomato-chopped
3 tablespoons of lemon juice
2 tablespoons of olive oil
2 teaspoons of fresh chopped mint
2 teaspoons of fresh chopped parsley
1/2 cup of chopped cucumbers
1/4 cup of chopped green onions
3/4 cup of chopped feta cheese
1 teaspoon each of salt, pepper and oregano
DIRECTIONS:In a small saucepan bring water to a boil, add Quinoa, stir. Bring Quinoa back to boil, simmer for 13 minutes. Remove from stove and let stand for 15 minutes. fluff with fork.

cucumber,--toss with olive oil and lemon juice. Mix in the parsley, mint and Feta cheese. season with salt, pepper and oregano. Chill salad before serving!
